Déliciae Hospitality Management’s 10th restaurant concept – PISCO South American Kitchen and Bar, opens with a big bang today at Resorts World Sentosa.
Managed by Déliciae Hospitality Management in partnership with Resorts World Sentosa, PISCO is a family style restaurant featuring the vibrant culture and cuisine of South America for a truly unique gastronomic dining experience.
Named after the port of a colonial town in Peru, which is a Quechua word that means “bird”, PISCO welcomes guests to indulge in the authentic flavours of one of the most diverse cuisines in the world, inspired by Native American fare and the food from the Andes Mountains.
PISCO’s menu offers a fusion of traditional dishes from Peru, Chile, and other countries in the continent. A signature dish that guests can anticipate is the ceviche. Quintessential to South American cuisine, this raw seafood dish typically marinated in lemon juice is a refreshing appetiser that makes a great start to the meal. PISCO presents an eclectic selection of ceviches, including the Conchas Borrachas – pisco-drunk sea scallops with passion fruit sauce; Pulpo – octopus in olive and capers sauce; Salmon Peruviano – salmon Tiradito; and Robalo – sea bass and mango.
Also on the menu are los pinchos, or skewer sets where guests can select a combination of three skewers made with meat, vegetables, and seafood, served with mint salsa, salsa criolla or Amarillo chili. Perfect for sharing, PISCO’s signature skewers include meat varieties of Pork Belly; Chicken Thigh; Lamb Shoulder; and Beef Ribeye. Seafood options include Squid; Salmon; Sea Bass; and Octopus.
Those looking for quick bite can take delight in PISCO’s bocadillos, or light snacks, such as South American classics Arepas venezolanas – a Venezuelan sandwich using corn flat bread; Empanadas – minced corn beef in corn dough parcels; and Bolas De Yuca – deep fried cheese balls with cassava mayo.
The new restaurant and bar pays tribute to its namesake with a variety of signature Pisco cocktails: Cocoloco Flip; Negroni Pisco; Chicano Classic; and the iconic Pisco Sour. Other cocktail favourites include thirst quenching flavoured daiquiris, margaritas, and mojitos. Groups of six can relish in the Mojito Grande – a supersized mojito punch bowl, to get the party started with the live band playing every night from Thursday to Saturday.
PISCO transports guests to the heart of South America with its vivid design elements. The brightly lit interior boasts kaleidoscopic motifs and wall murals of llamas, while the cascading multicoloured yarn symbolises a weaving loom that has been part of the Andean culture for thousands of years.
 
The convivial ambience makes it a perfect dining stop to experience the spirit of South America. PISCO is the latest exciting addition to the wide array of international culinary offerings at Resorts World Sentosa including five Celebrity Chefs restaurants, and Malaysian Food Street that serves up authentic hawker fare.
